[BRANDING] Replace branding in Swagger

Browse source 
- "Gitea" is automatically being determined in Swagger and cannot be
overridden, therefor we override it after `swagger generate spec` is run.
- Resolves https://codeberg.org/forgejo/forgejo/issues/226
